yes. Iy is butter that is heated and the white butter solids are removed. This is not an old timer thting. Clarified butter is used today whenever butter is used for dipping lobster or other seafood in butter.

Well Scouser, I remember those day well. Our difference between 'real' butter and the imitation one was a colorless, lard like spread = Oleo margerine. In time, they added the yellow color to it creating the better butter substitute. "Real'' butter was scarce and much more expensive, but it was my 'Better Butter'.

My wife buys Irish Gold in both Salted & Unsalted. She buys it at Costco for $14.48 (2 lbs).

Here in The States, there are a LOT of companies and the quality of butter varies quite a bit. I do remember the term (I grew up in the '50s) but even now, if you purchase several brands, you can tell the difference.

May favourite used to be "Land O'Lakes" butter but it seems to have lost something in the last few years. Maybe it is because they went to being politically correct and removed the Native American woman from the box. Maybe it was because people figured out how her knees were actually nipples... but I remember that from back in the '70s.

When we were in New Zealand, we discovered the most delicious butter. They export much of it to China, but I would pay anything for it here in the states. My husband and I loved it every time we had it.
