Have a Nikon D7200 and Z5 and a Nikon 200-500 zoom. Thinking of upgrading either to a Z7II or a Nikon 500 PF prime. What’s your experience/advice? I like the Z7II’s speed and resolution for wildlife and I like the lighter weight of the 500 PF. Decisions, decisions!

Camera bodies come and go. Good lenses can last forever.

Most folks will not see a dramatic difference in the quality of there images by upgrading. It is one of the major mistakes amateur's make and the main reason salesman smile. They say, of course you will see a difference. But like I said, 98% of amateur's will not notice a significant difference, because they keep doing the same things and expect different results.
I used the Nikon 200-500 for many years and won many wildlife contests with it.
I will tell you what, you win your first contest with your 200-500, then I will allow you to upgrade.

"...keep doing the same things and expect different results." Einstein's insanity is everywhere. Also,

Hmm, sounds like you're suffering from the, I "need more gear" syndrome. What is it that you can't accomplish with the gear you already have?

My threshold of resistance to GAS is very low, so I have many Nikons that need selling and after many years of ducking my wife's rolling eye look when I try to justify my need for this many cameras, she has got me started on selling some. Still, I had to have a Z7ii before breaking up the collection. I should still be able to sneak in a lens here and there. Anyway, I've been shopping for months and finally found a super deal on the Z7ii. My rationale was this... it would replace the D7500 in all regards and then leave room for the expansion of my skills and the betterment of the IQ of my shots. We shall see. Roberts (Used Photo Pros) on eBay was the best deal I could find after months of searching. Refurbished in like new condition was $1625 before tax. It also includes a one-year Allstate warranty... so, bargains are there if you're willing to wait. The cheapest one they have listed right now is around $1900, but they seem to turnover quickly. In the meantime, the D7200 is mighty nice.

IF I had to choose...I usually go with a better lens than a body.

I’m sure you would enjoy the 500pf, but you would be spending more money on an older system, and if you do then get rid of that 200-500 at the same time, it will just sit.

Although the mount is current, I’m thinking that the 180-600 isn’t great. If you want to keep a zoom long term, pick one whose barrel is one piece and the zoom is internal.

The z6II is left behind by the Zf except maybe the lack of a CFexpress slot and the grip. I’m not a big fan of the Z6II and would pick the Zf if I wanted a 24 Mpixel FF.

At the moment the Z7Ii is $1600 so there’s an argument for the Z6II.

Good Luck

Oops, I meant to add that the current sale on the Z7II might be telling of a new camera announcement.

If you need an assist in capturing wildlife, the Z7II will probably leave you wanting more. It’s best to use a camera with a high res stacked sensor. The Z8, at $4k is one solution, there is a Sony (FF) as well as Fujifilm (APS-C). The Fujifilm H2s is about a half stop noisier than the Z8, unless you crop down to APS-C, then the Fuji is about a half stop better. The Fuji is also higher resolution.
There is an adapter that should allow you to use your 200-500 on the Fuji.

It depends on what you shoot. The 500mm is great for birds, I shoot bears, bison ect and prefer a zoom.
