The terraces are composed of limestone and travertine. The hot magma below contains hot gases containing some carbon dioxide and calcium carbonate, some of which is dissolved to form a weak solution on carbonic acid which slowing eats away the limestone leaving travertine. Not salty.
The white travertine reflects heat and there are fewer bugs to irritate the elk. Not a real common sight to see them on the terraces, but there is a resident herd that lives year round in Mammoth Springs and are quite free to roam wherever they wish. They often provide serious traffic issues despite efforts to control them.
I'm sure my explanation is not perfectly scientific!
