Its speech recognition implementation is state of the art and developed by a company called Nuance Communications. Once the spoken command is recognized, the backend actions to perform are implemented using a complex set of algorithms that you probably do not care about. And most of those details would be secret, but the papers and patents published/filed by the SRI International AI Center that did the foundational technical work behind SIRI would be public.
