Is the Canon T7 a good camera for a beginner? Pretty much zero experience but wanting to get started...

Yes, it's a great starter camera for someone who has not previously used a dslr. You can use it all on full automatic or you can learn to take better pictures by learning how to use the different settings on it. The best way to learn how to use it is to join a local photo club and take a beginner's lessons. Then, after you have learned the basics, take more advanced courses.

It is good.
The R100 is much better.
The EF mount of the T7 has been discontinued for all intents and purposes.
The R100 is the current RF mount. Or for a little more the R50 is a better option if it can be afforded.
Also the RF mount cameras can use the EF mount lenses, if desired. But the T7 cannot use the current and new RF mount lenses.

Yes. You can spend more, but there's no need. This body 24MP camera has all the technology needed for general purpose photography. Which lenses and which subjects you select will determine if you ever find any weaknesses in this body. The bundle with just the 18-55 lens gets you started and lets you consider any longer (or wider) lenses that give more options for subjects.

As noted above, Canon and the other manufacturers are moving into mirrorless technology, where lenses designed for a mirrorless body will not be compatible with a DSLR like the EOS T7. But, in 30+ years of SLR (film) / DSLR bodies, Canon has manufactured and sold more than 100-million EF / EF-S lenses that mount to the T7. You may not find 'new' EF / EF-S lenses any longer for a T7, but the resale market is awash in cost-effective used lenses. Nearly all my lenses have been purchased used, and I've never had a problem with any of them, now in 20+ years of ownership and usage.

You can pay more for the 'newness' of mirrorless, but if working within a budget, there's no reason to pay that price-premium for simply 'new'.
