We took a touristy trip this summer and I was one of very few people with a “real” camera and I used it a lot; and if it wasn’t in my hand it was in my backpack. There were several days it stayed in my backpack and I used my phone exclusively. I’m putting an album together that’ll include photos from both and I doubt anyone will notice a difference.

I often use my Samsung S21+ as my back-up/wide-to-super-wide angle lens. As I usually have one of these mounted on my 80D: Canon EF 70-200mm f2.8L IS, Tamron 100-400mm f/4.0-5.6, or my newest addition, the Rokinon 85mm f/1.2 SP (manual focus) lens.
If I had to guess, I would say that the number of "Real Photographers" seen touring Europe or other destinations is probably exactly the same. In the past there was no cell phone option, so if you wanted pictures , you HAD to carry a camera of some sort. But carrying a camera doesn't really imply a level of skill.
The capabilities of modern cell phone cameras provide most people with the best pictures they have ever taken in a package that fits in their pocket.
Serious photographers have always been a relatively small group compared to casual photographers.

I just shoot with an 18-200.
Tours prohibit tripods- except perhaps true “photo tours”. Many of which provide fixed tripods on boats or special suvs.
The latest IOS and I assume android items come with fairly descent DOF.
Without the best equipment, we're only as good as everyone with a phone.

I don’t understand the confusion. If you want “travel pics” or “ candid people shots” then use a cell phone. If you want small shots (8.5 x 11 +-) to frame, or for the scrap/crap book, then use either a cell phone or a full-sensor digital.
I you want to have control ( assumes you know what you are doing) then use a digital full frame DSLR, where you control depth of field, shadow detail, lens compression, wide-angle and tele-photo, etc.
If you want to do quality, large-scale photographs, there is still only one way to do that, and yes, it includes a tripod, switching lenses, and sometimes a long shutter speed!
