I must have hit the wrong key(s) because I can have only one Tab open, and there is no provision to open a new Tab. My tabs are listed vertically on the left now. How can I get it back to normal with the Tabs at the top?

Probably accidentally clicked one of those picture thingys.
The browser I use has ones on the toolbar for showing/hiding bookmarks, sidebars, ...

I find Edge to be difficult to navigate in.
I fixed it with Firefox!!
I find this annoying as well. I wish there were a way when you got your screen the way you wanted it, you could record the setting, then when things got all to hell n' gone out of whack, you could push a couple keys such as Control and whatever and it would return to your chosen setting. I suppose this already exists, but if it does, I'd be the last person to know about it.
