We are staying in Door County for a week with plans on photographing all of the lighthouses and anything else that is worthy. Any recommendations as to the best vantage points or time of day to capture this beautiful peninsula? TIA

This looks like a ton of fun.
Also looks like roads in WV, where the road planners/ designers/ sadists pull out a map, lay a snake on it, goose the snake and then trace/ draw the lines in where the roads will go.

Actually the Hwy 42 photo is a mild wave of pavement, the telephoto lens visual compression exaggerates the effect, making it appear to be a slalom event. You'll be surprised at its slight curves when you first drive it. It's on the way to the Washington Island ferry which you should take to explore the island to see the larger of Door county's two Stavkirkes, a nearby Lavender Farm, Schoolhouse Beach, and Jackson Harbor if you wish to catch the passenger ferry to Rock Island and hike its Pottawatomie Lighthouse.
Peninsula Park is probably the state's most popular park, definitely worth the visit, especially with the new Eagle Tower overlooking Green Bay. Many hiking trails are worth exploring including out to the Eagle Bluff Lighthouse. Being the most popular park, it's also very crowded.
Newport State park is a designated Dark Sky Park just south of the Washington Island ferry at the end of Hwy 42. It's very popular for Milky Way photography besides being a wonderful park for hiking along Lake Michigan. I've always been fascinated by the distant, abandoned Pilot Island Lighthouse ruins to the park's east at the eastern entrance to the Death's Door Passage.
The Cana Island Lighthouse should be a nice walk across the causeway with the lake's lower water level. High water the past few years meant you waited for a ride across to the island unless you chanced wading
Take the side roads along the shoreline when you can, many county parks offering views, rock formations and hiking trails. Talk to the locals, enjoy the foods, hope for pleasant weather. (Door county is subject to cool temps depending on the winds off Green Bay or Lake Michigan which can change rapidly.) The county offers many possibilities to occupy your week, I hope you enjoy your trip!
