This is once again a great narrative and photos. We only were in Tibet once, and that was only in Lhasa, in 2007, so have very little knowledge. However, the views of the Potala Palace are familiar. Boy, the steps to climb! As I recall, it was about 800? And the squattie-potties inside! They tested the endurance of many a muscle.
The last photo of the bicyclist is interesting. Do you know what he is carrying? It appears to be animal meat. Do many Buddhists eat meat?

Buddhists shouldn't kill - anything. If an animal should fall off a cliff to it's death, then there is no reason not to eat it.

You're absolutely right. And certain types of Buddhists won't even eat meat under those circumstances.

If you could only see one part of Tibet, I guess it should be Lhasa. And to answer your question, most Buddhists do not eat meat.
