AI and eyes...
I have noticed that most AI cannot create realistic eyes. What do you think?
Perhaps too much emphasis on making them sharp and contrasty?

Beside obvious discrepancies, those who are 'correct' seem to be 'dead' as no expression related to the face.
It can be dangerous to generalize. My experience is sometimes they are, sometimes they aren't. That's what PP is for if you have an image you really want to save. Personally I have much more trouble getting AI to produce realistic hands and they can be between difficult and impossible to repair

I have seen a few examples on Deviant Art, and created a couple myself, that have excellent eyes. It often requires "Inpainting" to fix the eyes and face. I often peruse Deviant Art and try to tell the AI vs actual photos vs other types of digital art. I mostly get it right, but I have been fooled enough to know there are some excellent AI artists out there.
