Yes on both Muench workshops and Santa Fe workshops. Also check out Backcountry Journeys for a significant list of opportunities. Art Wolfe also offers some fantastic workshops.
Many opportunities with retirement time. Enjoy.

You know, Utube is now the best and most inexpensive photo course around. Just list your camera model with a statement like this
How can I get the best images using my ___________ (camera goes on the line)
Go over all the video's listed and you will get a truck load on information from them.
Better yet, google this, "how can I get the best photographs possible", you will get a lot on info, some very good, some not so good.
Good luck and keep on shooting until the end.
It's like asking for the best camera bag.....too many choices!
Check out Brent Hall, lightbendersvisuals.com. He lives in NM and regularly holds photography trips.
I would second the Big Bend area. Really varied landscape. In Marathon just north of Big Bend NP there is a photographer who has been well known, at least, in some Texas magazines. In Marathon, there is also a man that built his own small observatory. Just outside of Ft Davis is one of the world’s leading observatories - McDonald’s observatory. About 20-30 miles west of Marathon. Great night skies for astrophotographer.

First look into your local area. You can spend a lot of money on workshops and get little in return. Before going with a new workshop leader, I always call them, if possible, or exchange emails and try to figure out what level of photographer they usually attract. There is nothing worse than getting to a workshop and finding out that someone has a brand new camera and they have no idea how to work it and keep asking questions. This has happened to me!
This man is a fantastic teacher and extremely knowledgeable.

By now you have many, many suggestions. It is interesting that no one has asked what you want: instruction or location. If you want to learn the most look into Maine Media, Santa Fe Workshops, and maybe Anderson Ranch (although I haven't been back to Anderson Ranch since I took a couple of darkroom courses with John Sexton and a Dye Transfer printing course from Jim Bones).
Be advised unless you have sunk a bunch of $$$ into Telephoto lenses and all the fixings, a nature photography course may not be the best place to start. But you have given us absolutely no indication of your skill level.
If you just want location, then any of the named instructors will do. I did take a course from John Gerlach at
Gerlach Nature Photography. He is quite hard of hearing and in the classroom portion he seemed to always be yelling. He may have improved his hearing aids in the interim.
