Well.... I'm into several health/diet concerns so have found turkey chili to be a not bad alternative, using the right spices and flavorings. Hard to discern from carne de chili.

She-who-must-be-obeyed once grabbed cinnamon rather than chili powder in making the chili. Guarantee you, a different taste treat. Needless to say to all in earshot, "it was wonderful", just different.

I don't think anyone is making chicken or turkey chili because they think it will taste better than beef or other red meat. I had triple heart bypass surgery, and I'm trying to eat more heart healthy. I've also had to give up my carnitas burritos for chicken. My father ended up having two bypass surgeries, and one is enough for me.

Cincinatti has long had a chili/spaghetti chain "Skyline Chili" that does indeed have a primary offering incorporating cinnamon (core for a sweeter taste) in its standard formula -- it is a legend for locals and transplants who make it back.

Wow. I thought that someone was including a recipe (or a link to one). Slightly disappointed.
Just to say, Chicken chili sounds fantastic. My wife cannot do beef unless I want to take her to the hospital. Pork chili might be good, but I'd have to find some to try first.
