Bokeh is the nature of the out of focus highlights, with mirror lenses & point highlights these are always doughnuts because of the central obstruction.
Not overly obvious but visible in this shot with my 600mm miorror lens

If the highlights are longer the rings combine to produce double images which can be very distracting, as seen in the water here

With more conventional lenses paper cutouts can be used to shape the bokeh as desired (this one via a 50mm lens)

More subtle bokeh effects like 'soap bubbles' depend on the optics of the lens & have made some legacy lenses very collectable.
Very few of my shots have the smooth subtle blurring Ron showed at the start of the thread :(
