You are supposed to be able to see changes of exsposure in the viewfinder on a Z6ii and mine stays the same while making adjustments.

Make sure you are not in Auto-ISO! Which variable are you changing? SS, F-stop or ISO?

This particular issue is not peculiar to the Z-line. Its pretty much an industry norm.
Unfortunately, there is no standard name for it when browsing the menus. It can be listed as "settings effect ON", "continuous preview", etc.

I have been shooting for over fifty years and I will have to say that the mirrorless has been the biggest learning curve of any camera I have owed!

Just a normal and expected result of a technology that greatly multiplies the options and operations available to the user. For the $$ of a major Benz, Leica will sell you an outfit bereft of all those bewildering multiple options.
Establish a Funding Jar. Each time your digital gear puzzles you, put $5000 in that jar. In due time the jar will readily buy you the Leica outfit. In the interim, rotsa ruck, and RTFM !

You have that feature turned off. On my Sony I can turn "live view display" off so I can focus in dark area's. I am sure it's in your menu.
