A New Stew

Well, Stew, is pretty much stew, but a friend who is an expert hunter gave me several types of Game. This is the first, Elk. I have eaten Elk on two occasions, most recently a couple of years ago at the wonderful Geronimo in Santa Fe, but I've never cooked it myself. The meat is very lean and had been well trimmed. Cut bite sized, seasoned, floured and browned, then cooked for an hour and a half, veg added to the liquid for the last half hour. The meat was fine textured and very good, obviously not Beef, but I can't think of a way to characterize the flavor difference.

Looks good, QD! Those cuts look good, is there a reason you went for stew instead of steaks?

'Cause I'm "Stewish" or so my wife tells me. He gave me a generous box of meat so there will be other dishes.

Great photos. I have never had elk, but based on your photos I would try it.

Thanks! Getting Game is the challenge in the U.S. if you don't hunt. In England and a lot of Europe, though it is managed to an extent by government agencies, the game belongs to the Landowner. If the venison is as good as I remember it, I may have to get a license and take a deer this year.

Thank you! I think next year, plenty of deer on the property and in any case I'll be shooting for meat rather than trophy.

That looks delicious. I’ve eaten elk once and thought it was quite good. Almost as good as moose.

Thank you! Don't think I've had Moose. None in the immediate area so I can't scrounge some from my friend, he hunts locally. Think I remember a restaurant that serves it.
