Very helpful info for which I thank you.
You are correct in that I presently own no lenses. Buying them will be necessary and I have mentally built that into my overall budget.
Presently comparing all of the brands/models you have “suggested.”

In this case perhaps a Sony A7.

I bought a used D750 a few years ago on ebay. Great camera and it uses all my non motor Nikon lenses for auto focus.

If you have your heart set on a D700, hold the line. I picked one up last year from Japan with an OEM grip, 2500 clicks for $650. Absolutely showroom condition. It renders beautiful ethereal-looking landscapes if captured as Vivid Picture Control Tiff's. As opposed to the tack-sharp images from my D850. Don't presume the 12 meg sensor is not up the task. Portraits and landscapes are it's forte. If you need sports, action, wildlife or video there are other options you should explore.
And there are plenty of low-milage examples out there that have not been rode hard and put away wet.
Don't let samples coming from Japan dissuade you either.
I have nothing but high praise for the D700 as an artist's tool producing fine art.

I have a D300 that I get out a few times a year to blow out the cobwebs. I think that it takes beautiful jpgs of scenic situations right out of the camera with no processing. But since that is all that it does well with 12mp, it goes right back into storage.

The D300 while being a 12mpxl crop sensor, was no slouch. Its pixel density is the equvilant of a 28mpx full frame sensor. Better than a 24mpx D600/610 or D750/780. Plus being of a higher build quality. It is just a little out-dated with regards to current features and signal processor.

I can attest to the D300 build quality. I once slipped on ice and threw it over my car to land on a frozen asphalt road. It dented the corner of the camera but did not break the paint coating or cause a single hiccup in the camera functions. It still works dependably, but the images do not have the pliability of my 24mp cameras.
The D300 is the heaviest digital camera I have owned, and as such is a real homebody.
Pixel Density only counts in an iPhone (joke).

This discussion prompted me to get my D300s out and make sure I was remembering correctly... It is a little bit slow, compared to today's models, but it's really not too bad. In fact, we thought it was pretty fast when it was a current model. It struggles a little bit to match today's garish style of photography, but it was never intended to do so. It is capable, however, of artistically beautiful images, even as JPEGs from the camera, especially if some time is taken to thoughtfully and carefully adjust the Picrure Control settings.

Will I retire or sell my D500 and go back to the D300s? No. Will I quit using my D850 when it is appropriate? No. But I won't get rid of the D300s, either. It is capable of doing a nice job with a little care, and sometimes 12 MP is just right.
