Here goes an attempt at a recipe: (I just made it up, so as always, my proportions of ingredients are guestimates)
3 eggs per per crepe. I do one crepe at a time.
salt & pepper to taste
add a few tablespoons of water
mix vigorously with a whisk or fork
For the top of the crepe - sauté in a small skillet
Separately cut up 1/3 - 1/2 green, red, yellow peppers into small pieces
dice a little onion (to taste)
cut up a handful of black olives
For cooking: in a wide non stick fry pan:
Heat under a medium low light with a couple of patties of butter - just enough to coat the pan
When heated, add the egg mixture until the bottom is cooked. Add the mix from the skillet to make a 1-2 inch strip spread in the middle of the crepe. See my image
To finish - place the crepe under a broiler. Just enough time to cook the top of the crepe and melt the cheese. (I use a Beville toaster over)
Slide the crepe onto a plate and fold two sides over.
Serve & eat!!

You got it. From Pechter's in Harrison, NJ. Other than an occasional crusty Italian bread, it's the only bread we eat.
Our nearby super markets stock it daily.

You are eating too healthy, Mark...where are the fried potatoes!! Rye bread is my toast of choice too.
Forgot to mention that I use sharp cheddar cheese.
