Ive been there a few times and always enjoyed it. One thing I notice on all the wonderful pics posted in this thread is the lack of underwater photos! If you are able and amenable, take an underwater camera (Olympus Tough or similar) and get in the water. Ive scuba dived (dove, doved?) a few times there...great sea life there. Also, I suggest looking for a tour where you get in the water off a boat...lots of fun..of course that does change if tiger sharks show up.
Seriously though, get in the water. Snorkeling at Poipu is easly. Kids playing at Poipu, from an in the water perspective, might be fun too. Surfing on the north side towards Princeville, as I recall.
Also, check out if there is whale activity when you are going. Cant remember when they are there, but they frolic quite a bit by breaching.
A Tough is about 40 bucks a week to rent. Heck, you could buy one for about 300 and sell it back for that...or keep it!
