Okay, if I could use any camera and lens system on Earth to photograph a wedding, it probably WOULD be a Canon. I just like their skin tones best of all the brands I've used. (NOTE: I no longer use Canon gear because it is mediocre for video-plus-stills hybrid usage. For that work, I use Panasonic Lumix or Sony gear.)
That said, with raw processors as good as they are, the differences are quite subtle unless you are comparing against Canon Raw processed in DPP (Canon's own "secret color sauces." THAT gives it a slight edge favoring delicate skin colors and textures.
Under normal circumstances, however, IF I were to photograph a wedding, I'd use the camera system I had at the time. Given time to know my system, and the correct match of my needs to that system, I'd use Canon, Nikon, Fujifilm, Sony, or Panasonic Lumix. Heck, I'd probably use a Pentax if that was what was available. (I know nothing about modern Pentax gear... I've never seen any in the wild.)
What truly matter are skills, style, experience, knowledge, attitude, and the ability to capture the emotional moments of the people in focus. A good sense of editing, compositional and post processing skills, and pre-wedding planning are also requirements. So are patience, political sensitivity, tolerance, and emotional restraint. And so is the willingness to walk away from a groomosaurus, bridezilla, or her Mom… and not sign that contract. Oh, and I'd probably reword my wedding contracts to include a clause such as, "Photographer reserves the right to use any equipment deemed appropriate, subject to any venue-specified restrictions such, as no flash photography or no shutter noise." (Never photograph a wedding for pay without a detailed contract!)
When you photograph the bride, make sure the brand logo is reflected in her eyes.

It’s possible that the client is clueless about photography and just thinks that “everyone” uses Nikon. Maybe he’s seen the Nikons in use at other events or that’s what the other photographers he’s interviewed use.

Spelling ain't my long suite apparently.
When I decided that I was going to buy a very nice camera , both of my sons was working at a Box Store. They said " Dad buy a Nikon , the Canon cameras seem to always be returned". So that is what I did. I have never looked back.
