The best camera is the one that you happen to have with you at the time. Bigfoot would have been identified long ago had people used a real digital camera instead of their smartphone.
Let’s stop and think about this ever ongoing controversy over cellphone photography for a moment here. A number of comments have mentioned not using a cellphone for “serious” work. Of course, who would? I believe the intent of cellphone cameras is for casual, non-serious photography, for convenience to grab a moment or something. One can’t simply compare a cellphone camera to a serious dedicated camera, such as the aforementioned D850 and D500. Those are both professional level cameras and meant for professional use, or at least serious amateur photographers. And with all due respect, why do some want to dismiss those who use an iPhone or other cellphone camera? To me that is purely arrogance, and there’s no need for that.

My iPhone 12 Pro Max takes great photos within a narrow spectrum of light, shadow, color, and minor cropping; also has decent editing ability. But when I want to “play” with depth of field, shutter speed, exposure, cropping, etc., etc., I grab the D850 without hesitation!

Just curious as to why you say that? If taken with their smartphone it would have given the GPS location of where the image was taken.
I'm in the same boat as you with a D850 and iPhone 12 (except instead of the D500, I have a Nikon Df)... Keep your two "real" cameras as well as your iPhone 12 for convenience in emergency photo opps, and save your money.
I own an iPhone 12 and take pics with it In my opinion no phone can stand up to the photos taken with a good camera and lens. I prefer to use my 7100 whenever possible

I have an 850, a 500, and an iPhone - I have taken over two million pictures and studied with Ansel Adams - the meter algorithm in the iPhone is vastly better than either of the Nikons - but, of course, once you run your image through Photoshop the Nikons will be better
It all depends on what your purpose is for using either type of camera.
