Set your GPS for Holderness in the Lakes Region, almost exactly 1 hour north from Manchester. Take a hike up Rattlesnake Mountain (easy - 45 min or so) then take a lake tour of Squam Lake (1-1/2 hours - nhnature.org for tickets.) when done with that, head to Meredith on Lake Winnipisaukee for dinner.
The leaves here in the Lakes Region have started to turn but unfortunately are not yet at full color. You may need to go a bit further north to see more.
Mt. Monadnock is hike only. No driving to summit.

Hi. Writing this as I watch the sunrise from Meredith on Lake Winnipesaukee, and was just in Manchester on Saturday.
Location suggestions above are good. The west side of Manchester (old mill/factory district) should have some nice spots. Concord, about 30 minutes North, is a very pretty town. Suggestions above and Google will be your friends here.
I you want to come further North, Lake Winnipesaukee area is a nice suggestion. depending on where you go from Manchester, will be 45-75 minutes. The M/V Mt. Washington cruise is indeed still running, and a nice view of the lake that you can’t get from shore. Gunstock ski area, if you want easy access Mountain Views via chairlift, would be good as well. Castle-in-the-clouds should be very pretty this time of year (Ossipee).
I would like to note that there are no Fall colors in Manchester, and very little even up here in the Lakes Region area. About 2 weeks early. If you are looking for color, you need to go a bit further North, or gain some elevation, or both.
If you want dining suggestions, it would be the Common Man “group” of restaurants up and down Rt 93. All are good, and the diner’s are fun, but I like the one in Plymouth the best. If you are in Laconia, O’s Steak and Seafood in Lakeport is wonderful.

One of the best spots for viewing the foliage is from the Kancamagus Highway - (AKA NH-112) and according to some of my fellow ski club members in that area, the foliage is supposedly out of the ordinary this year. You will also find some of the covered bridges in that area, which combined with the fall foliage are pretty stunning. A smidge over an hour from Manchester - but totally worth it. If it is a clear day- Mt. Washington certainly also worth it
