, iron is the best. If you haven't tried Induction, it works very well with iron and free standing burners are quite good. You can have one at home for comparatively little.
I share your desire to have a gas stove in your home. I’ve never had one either. I still use my cast iron pan but it really needs a flame. Beautiful presentation on the stuffed potato. Your food photography always makes me hungry which the best ones always do.
Good fixings Yorkie. I love both cast iron and gas stoves I have always been lucky to have gas in my homes in NY and NC. Several years ago someone talked me into carbon steel pans, Paella and several size fry pans it’s a toss up up for me which are better cast or carbon. Keep cookin

Beautiful image and presentation. Potato looks amazing! Great job!
Love to cook in cast iron but for medical reason I have to stay away from it. Food cook in cast iron increase your iron levels in you body.
I was surprised when I found it.

As to the Iron in the body thing... I looked that up years ago, asked my doctor (my blood tests are always Very Good!), and looked it up again after reading your post... so with that, I will let others make their own decision. If your Doc says "knock off the Iron" I'd say that's good enough!
