Following advice from many, I decided not to rent a car which means I'm on foot or using transit or Uber. Hi and seems like your covering lots to see going in all directions.
However as a NYC resident my whole life I would like to recommend a few places.
There's Central Park in the middle of Manhattan. Bike riders zip threw, and before 9:00 am
dogs are allowed off leash and seem to be in groups of the same breed running & playing.
People have picnics on the grounds, and there's even a children's Zoo to visit, as well as a Carousel
open now to see.
There are (5) Boroughs to NYC, and Manhattan the most central. But go North to the Bronx and there's
the great New York Botanical Gardens with amazing flowers of all kinds to photograph. Also very well
known is the Bronx Zoo not far from the Botanical Gardens.
Manhattan has some great museums of various types; but photo's may not be allowed.
From where your staying further North on the West Side Highway there are paths that go towards the
George Washington Bridge into New Jersey. Also a very cool "Hi-Line" that is above the west side and
has some nice views of the Hudson River & across is New Jersey. Looking east into the City but 20 feet
or so above ground has plenty of interest to see.
Either on or above the ground there are some benches to just relax and take in the sites and people
walking or riding by!
There is plenty more to see and Brooklyn & Staten Island not yet mentioned.
NYC is very safe as far as covid-19, no masks are required outside; but most indoor area's do require them.
I'm not aware of the exact number, but many New Yorkers have been vaccinated already.
