I'm glad you're enjoying your new camera!
But, you know, there's absolutely no difference between doing an in-camera crop and doing the same crop later in post-processing. Either way you end up with the same thing.
However, an advantage to NOT doing an in-camera crop is that you have option to change your mind. If you just take full frame images with the 5DS-R you will later be able to crop less, or to reposition the crop, or to not do the crop at all. None of these are options when an in-camera crop has been done by using the camera set to 1.6X crop mode.
And I still think your 7DII might still prove its worth in some ways...
... a much faster continuous shooting rate (10 fps vs 5 fps)
... higher durability rating (200,000 shutter actuations vs 150,000)
... much higher selectable ISO (100-16000 vs 100-6400)
... a somewhat more advanced AF system (65 AF points, all cross type vs 61 AF points, 41 cross type)
... 7DII has a separate chip driving it's AF system (as do 1D & 1DX models), while AFAIK the 5RS-R does not.
... 7DII has Dual Pixel AF in Live View, which Canon omitted from the slightly later 5DS cameras.
... both have dual Digic 8 processors, to support the speed of the 7DII and to support the sheer file size in 5DS-R
... 7DII buffer can handle more images: 103 JPEGs/ 25 RAW versus 28 JPEGs/15 RAW in 5DS-R
... 7DII has a faster flash sync: 1/250 versus 1/200 in 5DS-R
I'm not saying your new 5DS-R isn't a great camera.... It certainly is! (I've been shopping for a 5DS myself) I think it may be the ideal tool for some things, while the 7DII can be more ideal for other stuff. For example, the 7DII is optimized for sports/action photography, while the 5DS-R competes with medium format digital for landscape/architecture work and some other photography where extreme enlargement might be wanted. While they have a lot of commonalities and cross-over, the two cameras are arguably best-suited to slightly different purposes.
Incidentally, the "pixel pitch" of 5DS-R/5DS and 7DII is identical. If you were able to scale up the 7DII's 20MP APS-C sensor to full frame, you'd end up with the 5DS' 50MP full frame resolution. A minor difference is that the 7DII has some Dual Pixel AF sites embedded directly in its imaging sensor, while the 5DS cameras do not.
