When I am in manual mode & press the exposure compensation button, the exp. comp. shows up as -3.0 in red, however it will allow me to change the shutter speed & aperture.
I wasn't sure if pressing the Exp. Comp. button should only allow me to change the Exp. Comp. setting.
I have the advanced manual but it doesn't tell me how to change the Exp. comp. if it is in Red.
The manual says you can adjust it from -2.0 to + 2.0.
Olympus Australia were unable to help as the camera is quite old, so I thought I would try uhh to see if someone might know.
I have tried a camera reset but still get the same result

In manual mode it only changes the meter setting. It will not automatically change the exposure. Since you are in manual mode, the camera expects you to set both the shutter speed and the aperture.
On my Nikons, I can still have auto ISO, so that is not affected.

I was wanting to get rid of the -3.0 in red, but I can't find a way of doing it.
I understand you using auto iso, but I think you can still apply exposure compensation with this setting on your camera.

The -3 in red that you see is not the exposure compensation setting. Olympus calls it "Exposure Differential" which is the amount of exposure difference between you manual settings and the meter recommended settings. Pointing the camera to a bright scene or setting a larger aperture (smaller number) or setting a slower shutter speed would fix that.
Bebu explained it well. Basically, that display is a "warning." You may want to deliberately under-expose a photo...or you may not, depending on lighting of your subject vs. surroundings. Best to do test shots with your desired settings, and check results.
Here is an example of a result that probably showed a warning of at least -2 on my Olympus. I like drama!
