I don’t have either of those but do have a Z6. I much prefer it over the D500 due to lower weight and EVF. Recently acquired Z 24-200 for it. Awesome combination for what I do.

Also, being FX, I suspect low light performance is better on the Z6.

I must confess the Z50 more often goes out the door with me. It might be more comparable to the D500.

There are only two things I dislike about the Z6, which I think persist in the II:

1. It does not allow alternate image areas with DX lenses.
2. The grip material is soft and dings too easily.

And one that the II fixed: the overpriced and incompatible xqd card ( no computer slot for it).

For what type of photography? Which lens do you plan to use? What camera do you shoot now? I have two D500 and love them (coming from the D7X00 series). I am sure eventually I will get a mirrorless (quieter shooting, the future) but at the moment, the lenses I use (the 300mm and 500mm PF) have no mirrorless equivalents so would need to use an adapter plus carry lots more batteries. Also still not sure if the focus on the mirrorless is up to that of the D500 (one of these days will rent one and see if BIF how it does).

I have both cameras (plus the D850 and several more). The Z6 II is great for portrait and the D500 is great for wildlife. That said I have native glass (S) for the Z6, Z7 and Z6 II and have high end glass for the DSLR's, I normally shoot wildlife with the D500 and the Nikon 500mm F5.6 PF and on occasion I use the D850 as well with a TC. For landscape I will use either the D850 or Z7. I plan on selling the Z6 and Z7 to fund the Z7 II in the near future. I don't believe in the weight savings on the mirror-less cameras as it all depends on the glass you put on the camera, however one advantage between the D500 and the Z6 II is the crop factor for full frame lenses.

What kind of picture taking? People? Wildlife (ie. birds)? Landscape? Are you also going to buy any new lenses? The Z6 II is full frame so the Tokina I, Sigma 50-100mm and 18-300mm are all DX lenses (what you call crop lenses), so if you use those lenses a lot, then the D500 might be the way to go (there would be no advantage to use these on a full frame camera). The Z6 II would be great for low light since full frame but it would be preferable to use it with full frame lenses. So if you are not going to buy any new lenses, I would think to use all your lenses you would go with the D500.

Take a mixed bag of pictures

Well Hank, guess your question is the Z6 II better for taking a mixed bag of pictures? There are many advantages to the Z6 II (or any mirrorless), such as what you see in the EVF is how the picture will look, the better eye focus, much better for low light photography (full sensor plus bigger pixels), quieter operation, etc. The new lenses for the mirrorless are also considered great!
A few downsides would be fewer pixels on a more distant subject, the faster burn through a battery and the cost. However, in these crazy times, my view would be if you can afford it, go for it! Always fun to get a new toy to celebrate one's retirement. And if you can hold on to the D500 for a bit and make sure you like the Z6 II, you can always switch back. Let us know how you like the Z6 II (I have been eyeing it as well).

That’s about right
See what trade in value is and go from their

As someone who has just begun to take photography more seriously, I am finding it is similar to my other hobbies of fishing and hunting. You are always thinking you need more gear-just one more lens, one more fly rod or one more shotgun. I am happy with both my cameras, one being a Z6 and the other a D500. I find myself using the D500 for wildlife and birds (mostly slow moving or stationary at this point) and the Z6 for portrait, landscape and general walking around. I go back and forth trying to figure out the next lens I “need.” I have come to really like the native Z primes and am holding off on spending money for the 70-200 Z. I am also really enjoying the 300 PF for wildlife on the D500 and am really looking hard at the 500 PF. My 200-500 is getting heavier by the day and I much prefer hand holding to using a tripod. That’s my story-not sure it helps.

The D500 does get heave after a period of time and I also prefer hand holding
Thanks
