Since I was forced into retirement in 2012, I have had more time to spend with my family, which is awesome, and obviously I've had more time for my photography, most of which has been in learning new post processing techniques.
However, I've also taken on all the cooking, laundry, cleaning and all of the outside work, but it's the cooking part I really enjoy. One of my favorite things I love to make (and eat) is chicken cacciatore, but after a while, like most "cooks," I'm always experimenting and decided to replace the chicken with shrimp...OMGOSH...my new favorite...lol.

Mmmmm, bell peppers, diced tomatoes, caramelized onions, tomato sauce, fresh parmesan cheese, shrimp over wild rice pairs nicely with a crisp Reisling.
