Image opened with Luminar AI, used the existing template to modify the foreground and mountain, replaced the cloudless sky with another, fiddled with exposure, and exported.

However .... the quality of the shot strongly suggests the Powershot G3 was/is not "a really crappy" camera at all but quite good. And.... I don't see where you might have got more out of it had you shot RAW. Yes... confirms for me that its the photographer that gets the shot not the camera or the software. Thanks for showing.
