I updated to OS11 (Big Sur) this week and found no problems at all until a couple of days ago when I tried to print using my R3000. Ok I know Epson stopped supporting this printer back in 2019 but it’s still been producing great prints right up until last weekend. Now when I tried to do a print, the printer has disappeared from the list in System Preferences>Printers and Scanners. My old Canon MG4150 was still there but no R3000. All I get when I try to add it is a an error message saying ‘successful-ok-ignored-or-substituted-attributes’.
To be honest I’m totally fed up with Epson. The ink is still being sold, I know I bought some last week and the printer itself is working perfectly, or was!!! To make things worse they still support the 2400 and 2880 printers which were brought out before the R3000, I had the 2880 before I bought it. Perhaps it was too good a printer so they stopped supporting in order to sell their newer models, I don’t know but I’m really angry at the thought of paying out over £600 to replace something worked perfectly ok. If I have to buy new, it’ll be a Canon model.
Don’t know if anyone can help with the error message, I can’t find anything that will help but I would be really grateful.
Have you contacted Epson our gone to their software support page yet?
Contact Epson support for its advice. Save yourself undue anguish and cash.

My Epson R2880 disappeared also when I upgraded my Mac OS. I went to Epson's site and dowloaded a new driver and now it works fine again.

Your gripe seems to be with Apple rather then Epson. You changed the OS so it's your fault or Crapple.
Another alternative might be Qimage, which is an excellent printing program by itself - it works in standalone mode as well as a plugin. If you email their support you can find out if your printer is supported.

Simple solution, have two computers. Keep one at the OS that works well with the programs you care about. Use second computer for new programs, OS updates, etc. Play leapfrog on computer replacements, and safely move up to new programing as it works for you. Saves a lot of angst.
I was lucky and split the learning curve with the at-work equipment until I retired.
