A wonderful tasty soup! The French eat this soup chilled, it's very tasty. I'LL be making more this winter.
I used 3 med Golden Yellow Potatoes, cut closely to the same size and cooked in a qt of Chicken Stock. Add two Leeks washed really well! One med Onion roughly chopped. Season pot well with the following.
Orgeno, Sweet Basil, Hot Cayenne Pepper Flakes (just a sprinkle), Rosemary, 3 Smashed Garlic Cloves. Also, add any spice you love, include one Knorrs Chicken Stock Cube!
Bring to a boil then lower to a simmer, cook 1/2 hour. Now it's time for your hand blender. Use your hand blender on high til mixture is smooth as can be! I added about 6 pieces of golden delicious potatoes on top soup with a sprinkle of Italian Parsley. Taste very good hot or cold!

Looks good AP; will give it a try.
A Dan Quayle moment - good photo. The recipe doesn't appeal to me, I'll stick to French or German versions.

Perfect when paired with a nice California Viognier or a dry Gewurztraminer or an unoaked Chardonnay like Foley or Bridlewood.
And, we make our own Chicken stock, there's often too much salt in the off the shelf product.
Bon Appetit

Hello and welcome, quixdraw! This is a fine and very tasty soup. You'll Love it. Maybe you spoke to soon. Thank You, for your comment. AP
Leek and potato is one of my favorite soups. It is a great winter warmer. My wife made a big pot of it yesterday. I'll have to show her your recipe to try. It looks great.
Why so yellow? Perhaps the "potatoe". I make this soup quite often and comes out a creamy color; my wife loves it. We make enough to eat hot the first day, cold the second. Sprinkle chopped green onions and serve with garlic toast rounds on the side. Yummy!
Oh, that looks delicious! Thanks for the recipe, AP. Everything you make looks so good!

Looks great. I wish I saw this before I went to the farmer's market this morning. Leeks 3 for a $1. They are a lot more than that at the grocery store.
When I cook soup, I make 6 - 16 quarts and freeze in quart containers. We love soup. Recipe sounds good.
Thanks. Great image!
