It's one thing to say which photo was taken by which camera. As someone above said, cameras have characterists that an expert might be able to distinguish.
The big question is, would one brand or level of camera take noticably better quality pictures, so that anyone could appreciate the difference? I would have to say no to that.
Send a dozen people out with a dozen different cameras, and you would get a wide range of quality in their photographs, regardless what cameras they were using.

I had to laugh when I saw your post... I shot an F3 back in the film days. When I decided to go digital, I couldn't make up my mind, here I had all (3 or4) Nikon lens but when I found out they wouldn't fit the new digital cameras...
My local Dealer (Casey Cameras) let me borrow a new Nikon (don't remember which model) with 50mm, I shot a few stills and he printed them for me, I didn't own a good color printer... I returned the Nikon and borrowed a 20D, with a 50mm lens, I went out and shot the exact subjects one more time, and had him print them again on the same printer.
For several days, I ask everyone I knew... " which is better, A or B"?
For all intents & purposes there was no difference in shots.
The difference in price tho, was several hundred dollars, maybe as much as 500, I don't remember... I went with the Canon and have never looked back.

Pity you didn't stick with Nikon because you could have kept on using those Nikkor lenses you had, unless they were 50 to sixty years old and needed to ba adapted. They do fit the latest Nikon bodies; now I shoot film and digital with the same lenses.
Oh well, can't turn the clock back - they haven't invented time travel yet but who knows, next year perhaps.

Nasty lines, photo destroyers!
Have you tried post processing a RAW file from your Canon gear, not a low resolution JPG.
The only time you save the JPG is when you have finished all post processing manipulations and are keeping the low res' for posting out etc, never to be "SAVED" again.
Compare and see if the bands are still evident?
