By all means, get the D850 which is maybe the best general-purpose camera currently available on planet Earth, and my own favorite.

I would keep the D500 for action shooting, as it excels at fast shooting -- it's fast and has a virtually bottomless buffer.

Also, the DX crop factor can be an advantage when shooting [wildlife] with a telephoto lens...

Whatever your reasons to switch are good for you and should be entirely up to you. Sounds like a plan. Personally I shoot entirely DX even tho half of my lenses are FX. Like you I don’t have a reason other than personal preference. Good shooting!!

I have had a D500 for a few years and love it, but always wondered about going down the FF route. Recently I took the plunge and bought a D850. I now shoot the D850 most of the time. I still occasionally use the D500, but my D850 is now my go to camera.

I suggest that you buy the book "Mastering the Nikon D850" by Darrell Young. Many people find this camera a bit much to handle. This book will cover the subject completely including how to set up the camera to take 30 fps and it also gives lots of tips about photography.

I'm not sure what you mean by crop factor but if you mean magnification that is something that you don't get

A longer lens gives you a narrower field of view. With a smaller sensor you get a narrower field of view for a given focal length lens, compared to that same focal length lens on a larger sensor.

You are correct about the crop factor but the Nikon D850 also has a crop sensor with better than 25MP. And the book that I mentioned above explains how when shooting video you do get magnification using the crop sensor.

We already had this discussion. Yes in general a wide angle gives you a wider angle on FF, but that lens is a DX lens. It is possible he could use it not in crop mode on the D800, I don’t know that lens, but if he’s shooting in crop mode there’s no advantage.

Pick the camera that let's you take the photos you want, whether it's an FX, DX, medium format, or view camera.
