A couple of observations about Thai Chilies: My wife of 26 years is Thai and a good cook but she is from Issan, the north east region of Thailand where the food is the hottest. When we first got married I had to get used to eating dishes that had about 10 of those in them and I did and ended up loving the food. I also ended up, after about four years eating it daily, having to have stomach surgery for the acid damage done by eating those chillies. Now she puts one in dishes made for me, still 10 in hers! The second observation is that, unlike other chillies, i.e. Jalapenos, Thai peppers burn going in but not coming out the next day.
