no spot metering

Why did Canon omit spot metering from the Canon R? I was considering it as an upgrade from my ancient 7D

I don't know that but I guess you don't need to meter with mirrorless. If you shoot fast then evaluative should be fine.

Download the EOS R Advanced User Guide (aka: user manual) and review page 152 regarding selection of the metering mode, including the availability of Spot Metering. Consider too the reliability of your information sources saying the EOS R doesn't provide a spot meter capability.

Not a Canon guy, but this camera has got to have Spot Focus. Keep looking. Read your manual. It's there somewhere.

"Spot Focus??" the subject is "spot metering!" Very different things.

That works. Compared to other metering patterns, use of Spot calls for just a little extra time and attention. The very same moments could instead be dedicated to a quick test shot. Same results either way. Works reasonably well even with an SLR.
