What software do I need to tether my D780 via USB to use my computer as my live view or playback of shots immediately after taking the shot or can it be done?
Capture One is a great app. Nikon has teamed up with them and there are now dedicated Nikon versions. I don't know if the free version has tethering though but they offer a 30 day free full feature evaluation. Tons of instructional webinars on You Tube. Another one that is free is digiCamControl. Good open source app. If it works for you send them a few bucks.

If you will be using a USB 3 cable to a laptop you might need a booster. A friend of mine has that setup and found continuous disconnects because the USB 3.0 ports in a laptop could not supply enough power. If tethering to a tower, that condition does not take place.
In my opinion, CaptureOne is the best software for tethering. You can use Lightroom but it has limited functionality for tethering. CaptureOne surpasses Lightroom for tethering hands down and it's significantly quicker during transfers.

I use digiCamComtrol and am very satisfied with the results. There are limitations but it is FREE (but you can contribute if you like it). It is a great way to ‘get your feet wet’ to see if you may want to purchase a more sophisticated program.
Another recommendation for Capture One Pro. I do not use it, but a friend of mine who does a lot of portrait work now uses it primarily for its great thethering capabilities and its accurate renditions of Nikon RAW colors.
It is now on sale at Capture One site. I am tempted to check it out as all I need is the Nikon version which costs a lot less than the version that will process any RAW file.

Capture One is great software, I use it myself. But it is totally not necessary for the OP's needs as he has stated, ". . . as my live view or playback of shots immediately after taking the shot . . .". C1 and other heavier duty solutions are complete overkill.
