It's easy to change Edge's default search engine in the settings, so Bing is not being forced. It's merely the initial default. The other popular engines are already in the settings, ready to select. The new Edge is quite fast.
In terms of overall privacy and performance, take a look at the Brave browser. It's built on the same open source "Chromium" browser that Google Chrome is based on, so the interface is familiar to many. It lacks the tracking and Google oriented stuff of Chrome. Fast, too.

Personally I prefer Edge, and it's pretty much the same base code as Chrome. Chrome is open source.
Like ALL of MS browsers you can set your default search engine, I use DuckDuckGo. early versions, for some odd reason, didn't have the right mouse back, so I was using Firefox. Now the only option missing, for me anyway, is when you right click a link "open in new tab" you can't set it to show the tab, you still have to click the tab manually.

I work in IT Field Services and IE is the browser version that is in Windows 7. When Windows 10 came out the updated microsoft browser is now Edge. I do not feel it works that well as there really is no way to use google search engine. You have to use Bing. I have dumped Microsoft IE and Edge and now modtly use Chrome and FireFox. Hope that helps explain the differences.

I haven't used Edge that much (mostly a Firefox user) but I did change the Edge default browser from Bing to Google. But that is on the "new" Edge. Maybe that wasn't possible on the old version...
