Requesting feedback on the quality and capabilities of the iPhone 11 pro for video. Most use cases for me would be in a jeep during a wildlife safari. I usually carry two or three dslr bodies (NIKON D5,850,500) and several lenses. Was thinking that instead of carrying yet another body (eg the Z6 which I’m told has great video capabilities), why not take an iPhone and use that as a convenient video camera - since it’s light and small. Comments/ advice welcome.
Depends on what kind of reach you’re looking for. If you need a long lens it won’t work.
If you like to take videos where the animals fill the screen, don't use a Iphone 11 Pro as it has no telephoto lens.
Phone video quality has become very good. The harder part is holding them and holding them steady. Get a grip or a gyro stabilized gimbal.
I’m not clear on your post. All 3 cameras you mentioned shoot video. Why do you need to add another device?

For my own edification, as opposed to asking others, if I were had this question, I would find a way to get my hands on one, shoot some video, view the footage on a large screen, 65" to 70," to see if it holds together.

It looks like you already have it covered. Is the iPhone 11 Pro your current phone. If so, Just take your phone along with you and see how you like it. Also, it looks like you are missing a nice video drone, so maybe get the Mavic 2 Pro. That will give you a different perspective.
The iPhone 11 Pro does have a moderate telephoto lens and could give you some decent video within its limits. If you’re looking for great video and long reach, that’s a different ballgame. DSLR's are difficult at best to do video.
Nikon is not exactly famous for being a videographers first choice for gear. The iPhone 11 will shoot 4K HEVC/H.265. Do the Nikons?
If one really wants to shoot wildlife video, consider a Panasonic GH5 or G9 and a Panasonic 100-400 lens. Crop factors put you in the 800 mm equivalent range. 4K too.

All 3 cameras mentioned are also video cameras.

That’s a great observation. DSLR's have great video capability and quality but that feature takes a bit of effort to master yet can be very rewarding, especially at the telephoto end.

So how would a cellphone be any different?
If you cannot point the gazillion dollar telephoto with the camera in video then you are hopeless in still as well.
Learn the camera vs just collecting as it appears to be the case.
Howdy, there’s no question you might appreciate the light weight convenience of the latest model iphone11 Pro for video, however hand_holding it to get good stable/ shake free video, especially at longer telephoto zoom Ranges, might be problematical. Consider one of the newest generation hand-held Gimbal stabilizers like DJI’s OSMO 3, designed specifically for smart phones with Bluetooth control of zoom/pan/tilt/ etc. also, make sure the iphone11 has plenty of memory because HiRes video (HD or 4K) takes up a lot of memory!
