I would pick a time close to noon. Ours were right around 11:00 give or take a little... You want the sun overhead as much as possible. However, the light changed while we were in the canyon as we had some clouds and it brought out different colors. I would though, go with mid day.
Enjoy! Use a high ISO for shutter speed and I used f7 to f9 in lower and wish I had gone f11 or so. It seemed like there was more light to work with in lower than upper. In the upper I had a tripod which they do not allow after Dec 20th due to no more photo tours, and I had an ISO of 1250 f11-f14 and my shutter was 1 second or more at times. So, you will have to adjust more ISO or lower f stop... if you do upper Antelope. There are still photo tours of Rattle Snake and Owl, lesser known canyons. If I go back I will do one of those.

They quit doing Photo tours as of December 20, 2019. You can still go on a regular tour. There are photo tours of Rattle Snake and Owl canyons.
