I thought I'd provide a couple of non-cropped Yellowstone Pics where I was absolutely as close or closer to the buffalo than I should have been. I was using a Full Frame camera with a 450mm lens, which would be the same as your D500 or D850 DX mode with a 300mm lens. So, these would represent the largest image you might expect. I used 630mm in some other cases and desired to crop those.

That's my story! I kept either a 24-70 or 70-200 on the 850 and a long one on the 500.

Unless you are going to be long distances from your vehicle, I suggest you take both cameras. Shoot the D500 with 300mm + 1.4 and the D850 with 70-200mm and take a 24-70mm for wide angle landscape with the D850. We did 6 weeks in South Africa this fall shooting wildlife and birds with a D500 and Z7 as I described, never removed lenses and never even used the wide angle. The combo worked perfectly!
