This is quite inaccurate. Many people are using Catalina with the Adobe CC Photography Bundle subscription, and not experiencing problems. It’s primarily people using the old, now UNSUPPORTED Adobe software, both 32- and 64-bit, who have issues.

This is a supplementary suggestion, not directly on your question.
You have now received many good suggestions and as you try them you may want to use a few for a while before standardizing (if ever).
For example, Apple Photos, free on the Mac, is a catalog based system and that is a potential issue for you. The issue will be there for any catalog based system. As I understand them (haven't used them much) they offer two ways to "import" your photo files from your camera/SD card. If you make sure to copy the files to your "drive" in a folder or set of folders of your own choosing and only then import them to whatever application, then you are future proofed. But if you allow the application to do the import you may find it awkward at best if/when you decide to work with a different one.
What is Apple Photo ? It's not on my Mac.
you have many choices so its impossible to say which is best for you. Photos is a good DAM and as said you can use plugins to get to NIK, ON1 RAW 2020 , Luminar, etc.
If you are doing processing everyday and can handle both a big learning curve and a subscription price certainly PS and Lightroom are great.
But for me after using and learning all of them On1 Raw 2020 is my choice. It is fast and accurate. It allows roundtrips to other pp software I use for specific functions like Topaz Studio 2 for photo painting and a fantastic filter called AI Clear which i am using a lot to get rid of noise from old slides and negatives from the 70s and 80s.

Photoshop CC photographer's subscription, can't go wrong, it will also install on all of your computers but can only be used on two of them at a time, you simply activate and deactivate on the various computers at the Adobe website, it is still there on the computer but you just have to manage which computers it is active on, currently I have it on 4 computers.
For $10/mo you get Photoshop CC/ Lightroom/ Adobe Bridge/ Adobe Camera Raw/ and a couple of web presentation programs. It is a great deal.
I've been using ON1's Photo Raw 2020 for the last couple of weeks cuz I upgraded to Catalina and didn't want to buy into Adobe's subscription model. PR2020 had no trouble converting my LR catalogue to it's own structure, retrieving past RAW images in PR2020 or processing. It has layers if you wanted to get into Photoshop sorts of complications but does everything as well or better than LR and has several neat features and shortcuts that make doing certain things like retouching sensor spots, fast culling of rejects, etc. Only complaint I have with first release is that it's a little slow but I'm hoping ON1 will work on speed in future updates.

I have a 2013 iMac 32GB - The Adobe subscription LR/PS - I haven’t found any issues with it. That being said there are a number of compatibility issues noted. Many have been fixed in PS 20.0.7; but not all - the two remaining 32 bit applications.
That being said there is a 3rd party effort to retrofit 32 bit support onto Catalina. Most likely some sort of VM solution. We’ll see.

Photoshop is easy if you ignore everything but what you want to do. Let's say you want to remove a tourist from you amazing panorama. Look up how to do it, watch a YouTube, do it and skip everything else.
Learning all of Photoshop may be humanly impossible!
Suggest you try Luminar. The current version is 3. Version 4 will be released in November. The beta version of 4 currently being reviewed on You Tube is very impressive.

This is pretty much how I handle it. YouTube has saved me many times.
