It looks like he is doing a back cut with the top of his saw, you go about 3/4 or more through and finish the cut going forward using the bottom of the saw and locking in the grips.
Looks dangerous but I grew up in a big logging community.
When I lived in Oregon we would cut ten cords of firewood a year which included falling and taking down leaners.
