Unless you are really unusual I will bet that my idea of "hot sauce" is different from your idea of hot sauce. I grew up with Cayenne Pepper Sauce as a normal thing on my food.
The first time I ate with my then future wife's family (Mexican-American) they were astonished that I put three times as much HOT Salsa on my food than any of them did. Huh? A white boy hillbilly who ate salsa like it was sweet relish!
They didn't know about Southern BBQ sauce and Frank's hot sauce.

It was a joke Gene, maybe a bad joke but a joke all the same. I have that converter for old manual lenses and I actually have gotten a few BIF shots off with an old Canon FD 300mm f/4 and a Pentax SMC 50mm f/1.2.

The shooters I hung out with in NY prefered full frame, high MP cameras to crop cameras. I don't disagree with them. I won't go as far as saying a crop camera is necessarily a wrong choice, but I do think image quality, and simply keeping a fast moving subject in the frame trumps the "reach" of a crop camera. I would be quite happy with a D850 myself, but this is a Canon thread.

Then there is a whole other world of HOT when you consider the Carolina Reaper

I grow weapon's grade Ghost peppers in my garden, and make a very "angry" sauce from them when I harvest in the fall.

And I used to do birds with a 300mm F4 Takumar on a Spotmatic, and later with a 600mm F8 Sigma reflex on a Contax RTSII - but I wouldn't want to ever do that again . . .

I have that Takumar Lens, I collect mostly Takumars and a few others but have about 40 old vintage lenses, that was my primary interest in getting a mirrorless system.

The difference may be $$$$.

In the case of your example, a D7500 in much less expensive than a D850.
