If you have time: the Columbia River George (waterfalls), Silver Falls State Park, and Crater Lake. All worth the detour.

There are many, many places to stop and snap photos. On US101 there are many pullouts so you can get off the road. Honeyman State Park (OR) has huge sand dunes that offer photo ops. Don't miss Ft. Bragg CA and the remaining Russian structures in the area. North of that, spend a little time in Patrick's Point State Park (CA). It is simply breathtaking.

And don't forget to pack a light coat or a good sweater as it's cool there even in the summer. Ask me how I know.....

Just take Hwy 101 from Astoria on down.
Cape Perpetua between Yachats and Florence Oregon - Devil's Churn and accessible tidepools, spectacular views from the visitor center up top, too.
Lots of small roadside lookouts, many close to the beach. Ona Beach has clay with embedded fossilized shells.
Harris Beach by Brookings at the south end of Oregon.
Then the Redwoods in northern California.

Astoria is in Oregon. If you’re just doing a drive-by, the stretch from Lincoln City south to Florence has the most scenic spots since 101 runs very close to the beach with several high headlands that put you 500' above the beach. If you can, take more time in this area.

Fort Clatsop near Warrenton is the lewis and Clark site mentioned above. your first Cannon beach must stop is at Ecola state park. In Tillamook. Head out toCape Meares for a neat lighthouse stop. If you begin at Astoria, consider a visit to the WA side of the river and fort Canby state park for two great light houses and the dramatic shot of Cape Disappointment light from waikiki beach. State park pass reqd.
Skip Sea lion caves and view the seals at Strawberry Hill wayside north of the caves. Better light and not so smelly.
The historic gold mining country along highway 49 in .CA offers much also.

I just took 49 S from Folsom to Yosemite. While very scenic indeed and a great road for my motorcycle it was trying with my RV pulling a toad. Don’t consider it if you are bothered by height.

In addition to the great advice above, take the Avenue of the Giants in Humboldt County and stop at the Tule Lake Elk reserve for some great elk shots. Stop @ Mendocino and Bodega Bay (near there) to see the old schoolhouse and location for Hitchcock's Birds. If you make it down past San Francisco, cut over to Hwy 1 @ Half Moon Bay to Monterey Bay/Carmel/Pebble Beach/Big Sur. Some stunning coast and lighthouses to take pictures of. And yes, while you're @ Yosemite, go to Kings Canyon/Sequoia for the Sequoias. If you do all that on your trip, you'll have done what its taken me decades to do.

You will drive over several cool bridges.
Rocks off of Canon Beach
Heceta Head Lighthouse, restored in the last few years. (there are other lighthouses too)
Depot Bay
Oregon Dunes
Lots of places. Take your time.

If you go as far south as Santa Cruz, visit Wilder Ranch State Park. Beautiful ocean cliff views from the walking trails. Park entrance is north of Santa Cruz on Hwy 1.

All of these posts provide good advice. One thing I haven't seen is anything about food. Seafood along the Oregon coast is outstanding. Best clam chowder and sourdough bread I have ever had, don't miss it.

In Astoria, be sure to visit the Maritime Museum. At the other end of the trip, all in the immediate vicinity of Yosemite NP, are the Sequoia NP and the Sequoia National Forest. While the Redeoods are magnificent—as someone mentioned—the Giant Sequoias are truly awesome.
