All kidding aside, I had a look at "the only authorized website" and I would suggest that most, if not all of the images there are not created in-camera, but in post-processing.

I am fairly sure that he used some kind of polaroid setup, his swimming pool images were very impressive.

unfortunately your location is showing as 'in hiding' so i have no idea if you will be able to see this tv prog but on sky arts 1 there is a prog called 'Hockney on Photography' where he demonstrates exactly how he does his collages among other things. if you have sky then it is available in the 'on demand' section. i have had a quick look on youtube but it does not seem to be there. I watched this a number of months ago and i remember that he visited the grand canyon and explained how he did the collage for it.
