What does a lens hood do and why is it so important indoors and outdoors, thank you.
It's not that important inside as out. It's purpose it to prevent lens flare when the sun reflects off the lens elements particularly when the sun hits the lens at an angle.

it is also good protection for your lens, keeps stray twigs, and fingers etc off of it
I'm also curious why they come in different shapes, some with cut outs, some solid?

Yes - it won't hurt and if you catch a reflection off glass or water it will help.

Not sure of why the different shapes. I think it's just a non functional design thing. Personally I think some of the shaped hoods are not as effective as a full one.
The ones with the cut outs are to help prevent vignetting (dark corners of the photo) when you zoom out to wide angle.

Flare can occur in both environments.
If nothing else use it to protect your lens. I recently tripped and fell, and the hood saved the lens from the gravel in the road. I was with my brother-in-law and he almost never uses his until my trip and fall. By-the-way, the lens functions fine, much to my surprise.

The hood will cut down flare from any light source. Even when there is no sun, the sky is a huge soft light source so the hood is a good idea even on overcast days.
The petal-shaped hoods are a compromise on zoom lenses, by necessity they are designed for the shortest focal length of the zoom therefore not very efficient for the zoom at its longest focal length.
And, as Gary says, it offers physical protection of the lens, too.
I use a hood from time to time to shade the lens from the effects of the sun my standard walk around lens is 67mm X 18mm X 135mm. The hood is an aftermaker foldable hood so I can leave it on the camera. Depending on the shot I sometimes get the following effect. I asked about this an have determined it was the cause of two things. 1. aftermarket design. 2. Telescoping in on the subject. I have ordered the proper lens fr my camera and should expect bettter results in the future.
Yep, wrong hood for that focal length. Glad you are getting something that will do the proper job.
