They pick it for salads when the leaves are very small (young and tender). I'm sure that's why they call it baby spinach. When it's full size, the leaves can be as large as a very large open hand. When they get that big, I cook some. I always plant the red vine variety because the wine colored vines really pop as the plant grows. To me, the white vine variety (light green vine) is not as pretty growing on a fence or arbor.
