Thanks, UTMike It just seems wrong that most of the yummiest things are not the healthiest for us.

These look like wonderful bread and wonderful photos. They made me try to look up how to make sourdough starter and how to bake it in a Dutch oven. Do you have any URLs to get us started? (BTW, I was thoroughly disgusted with several sites that peppered ads out on top of the text. I must run my monitor at 1128x634 dpi to make most text large enough to read. But I cannot read the text if there are fixed video ads on top of the text. Anyway, thanks so much for the mouth-watering photos.

Tom, during Covid, I was diagnosed with diabetes type 2, but I have discovered that, for me, the fat from butter does not raise my glucose levels. So, just try the bread with non-sugar jam and butter. --Richard

Thank you profbowman, There are many ways to make a starter #1 but not necessarily the best is to mix flour and water in a dish put cheesecloth over it, and let it sit, there is yeast in the air all around us and it will get into the flour water mixture and start bubbling and you can use that to make bread. The next way and probably the most common is to make your flour and water mixture and put a handful of grapes in the flour-water mixture do not wash the grapes first the yeast is on the skin of most the fruit and it will make a good starter, or the quickest is to just order some sourdough starter from King Arther Flour. This is a good site with simple instructions https://www.theclevercarrot.com/2014/01/sourdough-bread-a-beginners-guide/

Thanks, I appreciate the more ad hoc ways. --Richard
