I don't use a bottle of Yaki sauce. I make a sauce according to the recipe I am using, modified to my taste and substitutions from simple to more complex.

JustJill THANKYOU I copied the resipes and will start with the yaki-udon-noodles it looks great and I think I have all the ingredients (not sure on the Mirin) Thanks again. Feeling pumped about this new recipe, cant wait to make it.

You are welcome. Glad I could help. Most of the time I will substitute Sake for Mirin. Then of course have some sake with my meal.
