Butchering a hog for Christmas 12/31

Every Christmas we roast a pig in a “Caja China” well, it was my turn to do the deed.
Needless to say, ot came out fantastic.

One that size won't take over night, been there ,done that (once), mine was done in less than 4 hrs, now how to keep till the next day, I as lucky I had a huge BBQ, I just moved the coals down to the other end and left the pig where it was ,
The next day the meat was falling off the bone and still almost to hot to eat.

It is a Cuban tradition to roast a pig on Christmas Eve. As a child I remember my family getting ready for the feast and I remember one of my uncles participating in the killing of the animal. All memories now.
Women used to make home made sweets for the delight of those participating in the dinner and then we waited for the New Year.
