Easy Thanksgiving meal!

A lot of folks complain about the time involved in preparing the annual Thanksgiving family feast. I think putting out a bowl of these along with a bowl of mashed potatoes and gravy for dipping should cut down the work considerably!

That will save a lot of time, effort, and expense.

While on Cape Cod years ago, we stopped at a small restaurant for lunch. They featured a "Turkey Dinner Sandwich." I had turkey, stuffing, and cranberries. Delicious! Now, I make them at home.

Even easier Thanksgiving meal... It has all the traditional ingredients including turkey and gravy!

Thanksgiving is actually an easy meal. Put the turkey into the oven and remove it a few hours later. Gravy, veg, and Stove Top stuffing are easy. It's the clean-up that's a chore.

I brine my turkey overnight and then spatchcock it and pound it flat. I put it in a very hot oven to help crisp the skin and then turn it down to finish it. It cooks faster and more evenly, is juicer, and has crisp skin. I make my own cornbread to make dressing, which I put in an aluminum pan, and put the turkey on a rack on top so the turkey drippings go into the dressing. I also make homemade stock, including the giblets and backbone, to make gravy. Not easy, but if something is worth doing, it's worth doing the best you can. And when I cook I expect those I am cooking for the do the cleanup and they are happy to.

For many years there was a restaurant on the Cape, Fred’s Turkey House, that served Thanksgiving Dinner all year.

I have found over the years that a lot of my guests aren't crazy about turkey.
So then I switched to ducks...which was a lot more work and a worse reception.
Goose did better...but still.

Finally for about a decade now I just have a big assortment of meats and cheeses and wines from all over the world...food no one has tried yet.
Yes it's more expensive but everyone is excited...and overweight.

If it's just the two of us...smoked pheasant is a given.
